
With this weeks selection I made a quick mid-week pilaf.
First I sautéed a sliced onion in oil then added a couple of chopped carrots. While these were softening I added some sliced leek and some chopped garlic.
Next I washed a handful of green lentils, removing any dust, and threw them into the saucepan and after turning them in the oil and mixing them with the vegetables I added some stock, just to cover them.
When things looked like they were all cooking nicely together I peeled off a few of the outer leaves from the cabbage and washed them before removing the bottom part of the rib and chopping them into half inch pieces. I added them to the pan along with about 3 handfuls of rice (it could either be white or brown) that I rinsed under the cold tap. Mix everything together and season well.
I seasoned the whole lot with salt, pepper, smoked paprika, turmeric etc. before topping up the vegetable mix with stock and clamped on the saucepan lid to allow the rice to absorb all the juice and the lentils and vegetables to finish cooking together.
Check all the stock has been absorbed and everything is the right softness for you before spooning into a dish and sprinkling with soy sauce and some fresh herbs if you have them.
The whole preparation and cooking time is less than 30 minutes!
